Yesterday we made cupcakes with one of Abbey's little friends. We called them angel cakes - you know the ones where you slice the top off and cut that bit in half - then rearrange the pieces back on with chantilly cream and strawberries dusted with icing sugar?? I forgot to get a photo so I'll have to do it again sometime. Anyway the little semicircles of cake stuck back on top look like wings so we call them "angel cakes"!
Today was the last day before Kieren arrives home. 8 days seem so long. Especially with 2 whole weekends... It seemed an especially long day today. So to fill in time we decorated the six cupcakes left over from yesterday. Now if you ask Abbey her favourite colour she gets out her hand and starts reeling off colours - in order of preference - so you won't get it wrong. the list goes like this:
- Purple
- Green
- White
- Blue (aqua to be precise)
- Pink
Yep. In that EXACT order. As her Grandpa mused " She certainly knows her mind...!!!"
Well these cupcakes are Abbey's favourite colour cupcakes. You should have seen their faces after the eating part!! I decided they weren't fit for photos!!
The recipe is great too - yummy butter cake recipe that can be used for big cake or small cupcakes:
- 125gm butter (room temp)
- 1/2 tsp vanilla
- 1/2 C castor sugar
- 2 eggs
- 1 1/2 C self raising flour
- 1/3 C milk
Beat together butter and vanilla until creamy with electric mixer. Add sugar and beat again. Add eggs one at a time beating after each. Stir in half flour with half milk. Add remaining flour and milk and beat until smooth. Put patty pans in muffin tins and fill half way with cake mixture. Bake in mod oven for around 13 minutes. Decorate when cool. Best eaten on day of baking! (makes approx 12)

honey, for just cooking with kids you need a reward. For cooking with kids after being on your own with them for 8 days you need a medal! (or at the very least a cuppa, foot rub and possibly a facial....) xx
